Ingredients

2 tbsp cornstarch

Zest and juice of 1 lemon

1/2 tsp almond extract

For the Dough:

1/4 cup granulated sugar

1 cup warm milk

2 1/4 tsp yeast (instant or active dry)

1 egg and 1 egg yolk

1/4 cup salted butter, melted

4 cups bread flour

1/2 tsp salt

Zest of 1 lemon

For the Lemon Cream Cheese Frosting:

4 oz cream cheese, softened

1/4 cup butter, softened

1 1/2 cups powdered sugar

1 tbsp lemon juice

Zest of 1 lemon


Instructions

  • Prepare the Dough:

    • Warm the milk to about 110°F (43°C). Stir in yeast and let it activate for 5-10 minutes.

    • Add sugar, butter, egg, and lemon zest to the milk mixture, mixing until smooth.

    • Gradually add bread flour and salt, mixing until combined. Knead the dough for about 8 minutes until smooth.

    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour, or until doubled in size.

  • Make the Blueberry Filling:

    • In a saucepan, combine blueberries, sugar, cornstarch, lemon juice, and zest. Simmer over medium heat until thickened, about 5-7 minutes. Let cool to room temperature.

  • Assemble the Rolls:

    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

    • Punch down the dough and roll it out into a 12×18-inch rectangle. Spread the blueberry filling evenly over the dough, leaving a small border around the edges.

    • Roll the dough up tightly, then slice into 12 equal pieces. Place the rolls into the greased baking dish.

    • Cover and let the rolls rise for another 1 hour.

  • Bake:

    • Bake the rolls at 350°F (175°C) for 20-25 minutes, or until golden brown.

  • Prepare the Frosting:

    • In a medium bowl, beat together the cream cheese, butter, powdered sugar, lemon juice, and zest until smooth and creamy.

  • Serve:
