Ingredients

2 boneless, skinless chicken breasts, cut into pieces

1 tablespoon olive oil (or oil from sun-dried tomatoes jar)

2 cloves garlic, minced

1/4 cup sun-dried tomatoes (in oil), chopped

1 teaspoon dried oregano

1 teaspoon paprika

1 cup orzo pasta

2 cups chicken stock

1/2 cup double cream

1/2 cup Parmesan cheese, grated

2 cups baby spinach

Freshly ground black pepper, to taste


Instructions

  • Cook the Chicken:
    In a large pan, heat olive oil over medium heat. Add the chicken pieces and sauté until browned. Add the minced garlic, chopped sun-dried tomatoes, oregano, and paprika. Cook for 1-2 minutes until fragrant.

  • Add the Orzo:
    Stir in the orzo pasta, chicken stock, and freshly ground black pepper. Cover the pan and bring to a simmer. Cook until the orzo is nearly tender and most of the liquid has been absorbed.

  • Add Spinach and Cream:
    Once the orzo is almost cooked, add the spinach and double cream. Stir until the spinach wilts and the sauce thickens.

  • Finish with Parmesan:
    Turn off the heat and stir in the grated Parmesan cheese. Taste and adjust seasoning as needed.

  • Serve:
    Serve immediately, garnished with extra Parmesan or fresh herbs if desired.
