Description

These Monster Cookie Bars combine rich, chewy peanut butter cookies, packed with oats, chocolate chips, and colorful M&Ms. With an easy-to-make dough and a perfect balance of sweet and salty, these bars are the ultimate treat for any occasion. Ingredients

For the Bars:

1/2 cup unsalted butter, softened

1/2 cup peanut butter

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chocolate chips

1/2 cup M&Ms

1/2 cup peanut butter chips (optional)


Instructions

  • Preheat the Oven: Set the oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper.

  • Prepare the Dough: In a large bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until smooth.

  • Add Eggs and Vanilla: Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.

  • Combine Dry Ingredients: In a separate bowl, whisk together oats, flour, baking soda, and salt. Gradually add to the wet mixture and combine.

  • Add Mix-Ins: Fold in chocolate chips, M&Ms, and peanut butter chips (if using).

  • Spread the Dough: Transfer the dough into the prepared baking dish and press it down gently with a spatula.

  • Bake: Bake for 18-22 minutes, or until the edges are golden and a toothpick inserted into the center comes out mostly clean (slightly underbaked for a chewy texture).

  • Cool and Slice: Allow the bars to cool completely before cutting into squares.
