Description

Oreo Brownie Cookies combine the fudgy, chewy texture of brownies with the crispy edges of cookies, and chunks of Oreo cookies in every bite. A simple, indulgent treat perfect for any chocolate lover.


Ingredients

225g (8 oz) semi-sweet baking chocolate

55g (1/4 cup) unsalted butter

2 large eggs, room temperature

75g (1/3 cup) granulated sugar

75g (1/3 cup) dark brown sugar

1 tsp vanilla extract

75g (2/3 cup) all-purpose flour

1 tsp baking powder

Pinch of salt

80g (1/2 cup) chocolate chips

1014 Oreo cookies, crushed (plus extra for topping)


Instructions

  1. Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl or using a double boiler, melt the semi-sweet chocolate and butter until smooth. Let it cool slightly.
  3. In a large bowl, beat the eggs, granulated sugar, dark brown sugar, and vanilla extract until light and fluffy, about 2-3 minutes.
  4. Whisk in the melted chocolate and butter mixture until well combined.
  5. Stir in the flour, baking powder, and salt. Gently fold in the chocolate chips and crushed Oreo cookies.
  6. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart. Optionally, chill the dough for 10 minutes before baking for thicker cookies.
  7. Bake for 12-14 minutes, or until the edges are set but the centers are soft. For perfect shapes, swirl a round cookie cutter around the hot cookies right after they come out of the oven.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, use high-quality semi-sweet chocolate for richer flavor.
