Ingredients
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup fresh parsley, chopped
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a medium saucepan over medium heat. Add chopped onion and sauté for 3-4 minutes until soft and translucent.
- Add minced garlic and cook for 1-2 minutes, taking care not to burn it.
- Stir in orzo pasta and cook, stirring frequently, for about 2 minutes until lightly browned.
- Pour in vegetable broth and add thyme, oregano, salt, and black pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and broth is absorbed.
- Remove from heat and fluff orzo with a fork. Stir in fresh parsley and Parmesan cheese if desired.
- Serve warm as a flavorful side dish or light meal.
