Description

These Slow Cooker French Dip Sandwiches are melt-in-your-mouth delicious, made with tender chuck roast simmered in a flavorful blend of beef broth, balsamic vinegar, herbs, and aromatics—no soda required! Topped with melty cheese and served on crusty rolls with homemade au jus, they’re the ultimate comfort food made easy.


Ingredients

3 lbs chuck roast

1 tbsp olive oil

1 onion, thinly sliced

4 cloves garlic, minced

2 cups low-sodium beef broth

1 tbsp balsamic vinegar

1 tbsp soy sauce

1 tbsp tomato paste

1 tsp dried thyme

1 tsp dried rosemary

½ tsp black pepper

1 bay leaf

6 hoagie rolls or French sandwich rolls

6 slices provolone or Swiss cheese

Optional: fresh parsley, for garnish


Instructions

  • Sear the beef: Heat olive oil in a skillet over medium-high heat. Sear the chuck roast for 3–4 minutes per side until browned.

  • Layer aromatics: Place sliced onion and garlic in the bottom of the slow cooker. Set the seared roast on top.

  • Mix broth: In a bowl, whisk together beef broth, balsamic vinegar, soy sauce, and tomato paste. Pour over the roast.

  • Season: Sprinkle in thyme, rosemary, black pepper, and add bay leaf.

  • Slow cook: Cover and cook on LOW for 8–9 hours or until beef is fork-tender.

  • Shred & soak: Remove roast, shred, and return to slow cooker to absorb juices.

  • Toast & assemble: Toast rolls, top with beef and a slice of cheese, then broil until cheese is melted.

  • Serve: Strain and serve the broth as au jus for dipping. Garnish with fresh parsley.

Notes

Swap out provolone for gouda, mozzarella, or Swiss.

Add jalapeños for a spicy twist.

Use ciabatta or sourdough rolls for variety.

Searing is recommended but optional if you’re short on time.

Fresh herbs may be used—triple the amount of dried herbs.
