Description

These delicious ROLO Ritz Cookies are the perfect blend of sweet and salty! With creamy ROLO caramel candies sandwiched between crispy Ritz crackers and drizzled with smooth semi-sweet chocolate, these treats are a crowd favorite. Ingredients

24 Ritz crackers

24 ROLO caramel candies

1 cup semi-sweet chocolate chips

1 tablespoon vegetable oil

Sprinkles (optional, for garnish)


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.

  • Place 24 Ritz crackers on the prepared baking sheet, spacing them evenly apart.

  • Unwrap the ROLO caramel candies and place one on top of each Ritz cracker.

  • Carefully transfer the baking sheet to the preheated oven and bake for 3-5 minutes, or until the ROLO candies are slightly softened.

  • Once the cookies are out of the oven, immediately press a second Ritz cracker on top of each melted ROLO candy to sandwich it between the crackers.

  • While the cookies are cooling, prepare the chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and melted.

  • Drizzle the melted chocolate over the top of each cracker sandwich, covering the ROLO caramel filling. If desired, sprinkle with colorful sprinkles or other garnishes.

  • Allow the cookies to cool for a few minutes, then transfer them to the refrigerator to set the chocolate coating.

Notes

Feel free to add festive sprinkles for special occasions, or even crushed nuts or sea salt for a more savory touch.
