Description

Tiramisu Cookies bring the rich flavors of tiramisu into a soft, buttery cookie form, with a creamy mascarpone filling, a hint of coffee, and a dusting of cocoa powder for an indulgent treat.


Ingredients

For the Cookies:

1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

1 tablespoon instant coffee granules

1 tablespoon hot water

For the Mascarpone Filling:

½ cup mascarpone cheese

½ cup heavy cream

2 tablespoons coffee liqueur

For Dusting:

¼ cup cocoa powder


Instructions

  1. Prepare the Oven and Baking Sheets: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Set aside.
  3. Cream the Butter and Sugar: In a separate large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. This should take about 3-5 minutes.
  4. Add the Eggs: Add the eggs, one at a time, to the butter mixture, beating well after each addition to ensure they are fully incorporated.
  5. Add the Vanilla and Coffee: Stir in the vanilla extract until combined. Then, dissolve the instant coffee granules in the hot water, and add it to the butter and egg mixture. Mix until smooth.
  6. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough to keep the cookies tender.
  7. Form the Cookies: Using a tablespoon or small cookie scoop, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. You should have about 24 cookies.
  8. Bake the Cookies: Bake for 10-12 minutes, or until the edges of the cookies are lightly golden but the centers remain soft. Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
  9. Prepare the Mascarpone Filling: While the cookies are cooling, prepare the mascarpone filling. In a mixing bowl, beat the mascarpone cheese and heavy cream together until smooth and creamy.
  10. Add Coffee Liqueur: Add the coffee liqueur to the mascarpone mixture and continue to beat until well combined.
  11. Assemble the Cookies: Once the cookies have cooled completely, spread a generous amount of mascarpone filling on the bottom side of one cookie and sandwich it with another cookie to form a cookie sandwich.
  12. Dust with Cocoa: Sift cocoa powder over the top of the assembled cookies for a dusting of flavor and decoration.
  13. Serve: Serve immediately, or refrigerate the cookies for about 30 minutes to let the filling set before serving.

Notes

If you want a stronger coffee flavor, add an extra teaspoon of instant coffee granules to the dough.

For a dairy-free version, use a dairy-free butter substitute and coconut cream in place of heavy cream.

If you prefer not to use coffee liqueur, substitute with brewed coffee or espresso for a non-alcoholic option.

You can skip the cocoa powder dusting if you prefer a cleaner look or are avoiding chocolate.
