Description

Savory homemade dumplings filled with crumbled tofu, tangy kimchi, and aromatic seasonings, offering a comforting yet bold plant-based dish with soft, chewy wrappers.


Ingredients

1 block (14 oz) firm tofu, drained and crumbled

1 cup kimchi, chopped

1/2 cup shiitake mushrooms, finely chopped (optional)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon sugar (optional)

2 green onions, chopped

1 tablespoon rice vinegar

Salt, to taste

Freshly ground black pepper, to taste

2 cups all-purpose flour

1/2 teaspoon salt

3/4 cup water

Cornstarch or extra flour for dusting

Soy sauce for dipping

Chili oil (optional)

Fresh cilantro (optional)


Instructions

  1. Press and crumble the tofu to remove excess moisture.
  2. Finely chop the kimchi and drain if watery.
  3. Heat sesame oil in a pan over medium heat and sauté ginger and garlic until fragrant.
  4. Add tofu, kimchi, soy sauce, sugar (if using), rice vinegar, mushrooms, and green onions. Cook for a few minutes until flavors meld.
  5. Season with salt and pepper, then let the filling cool completely.
  6. In a bowl, mix flour and salt. Gradually add water until a dough forms.
  7. Knead the dough on a floured surface until smooth and elastic, then rest under a damp cloth.
  8. Divide dough into small portions and roll into thin circles.
  9. Spoon filling into the center, fold into half-moons, and pinch edges to seal.
  10. Steam dumplings until tender; optionally pan-fry for a crispy finish.
  11. Serve hot with soy sauce and optional chili oil.

Notes

Store uncooked dumplings in the freezer for up to 3 months.

Cooked dumplings keep refrigerated for up to 3 days.

Use store-bought wrappers to save time if desired.

Adjust spice level with chili oil at serving.

Additional vegetables like cabbage or carrots can be added to the filling.
