Ingredients
1 large flour tortilla or a few small corn tortillas
6 large eggs
½ cup cottage cheese
1 cup fresh spinach, chopped
2 cloves garlic, minced
1 tomato, sliced
½ cup shredded sharp cheddar cheese (or any cheese of your choice)
Fresh basil leaves
Salt and pepper
Instructions
Prep the Pan: Spray a 9-inch pie pan with cooking spray and line the bottom and sides with the tortilla(s).
Make the Egg Mixture: In a bowl, whisk together the eggs, cottage cheese, salt, and pepper. Stir in spinach, garlic, and most of the basil.
Assemble the Quiche: Pour the egg mixture into the tortilla-lined pan, then top with tomato slices and cheese.
Bake: Bake until the eggs are fully set, then let the quiche cool. Garnish with the remaining basil before serving.
Notes
You can substitute cottage cheese with ricotta, goat cheese, or a dairy-free alternative.
For extra spice, add red pepper flakes or jalapeños to the egg mixture.
The quiche can be made ahead of time and stored in the fridge for up to 5 days, or frozen for up to 3 months.
