Ingredients
½ cup fresh pineapple juice
¼ cup soy sauce
2 tablespoons honey
2 tablespoons lime juice
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon red pepper flakes (adjust for spice level)
¼ cup fresh cilantro, chopped
2 pounds fresh fish fillets (such as salmon, mahi-mahi, or tilapia)
Instructions
- Ensure all ingredients are ready and measured for convenience.
- In a bowl, whisk together the pineapple juice, soy sauce, honey, lime juice, minced garlic, grated ginger, and red pepper flakes until well combined.
- Stir in the chopped cilantro to give the marinade a fragrant, fresh note.
- Place the fish fillets in a large dish or resealable bag. Pour the marinade over the fish, ensuring it is well-coated. Seal or cover the dish and let the fish marinate in the refrigerator for 30 minutes to 1 hour.
- Preheat your grill or oven. Remove the fish from the marinade and discard any excess. Grill or bake the fish for 10-15 minutes, or until it flakes easily with a fork.
Notes
For extra heat, add more red pepper flakes or include a chopped chili pepper in the marinade.
Enhance the sweetness with a splash of orange juice.
