Description

Tuna Cucumber Boats are a refreshing, healthy, and quick snack or meal with a crunchy cucumber base and creamy tuna filling, packed with protein and flavor. Perfect for a low-carb option.

Ingredients

2 medium cucumbers

1 can (5 oz) tuna, drained

2 tablespoons mayonnaise

1 tablespoon Greek yogurt (optional)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

2 tablespoons chopped celery

2 tablespoons chopped onions

Salt and pepper to taste

Fresh dill or parsley for garnish (optional)

Instructions

  1. Prepare the Cucumbers: Cut each cucumber in half lengthwise. Scoop out the seeds gently with a spoon to create a hollow space for the tuna mixture. Slice into smaller sections for individual servings if preferred.
  2. Make the Tuna Mixture: In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt (if using), Dijon mustard, lemon juice, chopped celery, and onions. Stir until fully combined.
  3. Season the Mixture: Add salt and pepper to taste. Optionally, add herbs or spices like garlic powder or paprika.
  4. Fill the Cucumbers: Spoon the tuna mixture into each cucumber half. Pack it lightly for an even filling.
  5. Garnish: Sprinkle fresh dill or parsley on top for extra flavor and color.
  6. Serve: Serve immediately, or refrigerate for a short while if you prefer them chilled.

Notes

For extra crunch, add chopped veggies like bell peppers or cucumbers to the tuna mixture.

Can be made vegan by substituting tuna with mashed chickpeas and using vegan mayo and yogurt.

If using flavored mayo, choose options like garlic or chipotle for added flavor.
