Description

A juicy garlic Parmesan chicken meatloaf made with ground chicken, savory herbs, and buttery richness, delivering a tender and flavorful twist on a classic comfort dish.


Ingredients

2 lbs ground chicken (or ground turkey or lean ground beef)

1 cup shredded Parmesan or Romano cheese

1 cup panko or regular breadcrumbs

2 large eggs

4 cloves garlic, minced

1 tsp garlic powder

1 tsp onion powder

1 tsp dried basil

1 tsp dried parsley

1 tsp salt

1/2 tsp black pepper

1/2 cup whole milk or plant-based milk

2 tbsp unsalted butter, melted

1/4 cup additional Parmesan cheese for topping

2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper or lightly grease a baking sheet.
  2. In a large bowl, whisk together eggs and milk until combined.
  3. Add minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, and black pepper. Whisk to distribute evenly.
  4. Fold in breadcrumbs and 1 cup shredded Parmesan until just combined.
  5. Add ground chicken and gently mix with hands until evenly incorporated, avoiding overmixing.
  6. Transfer mixture to prepared pan or shape into a loaf on a baking sheet. Press evenly.
  7. Brush half of the melted butter over the top.
  8. Bake for 30 minutes, then brush with remaining butter and continue baking 25–35 minutes more, until internal temperature reaches 165°F (74°C).
  9. If browning too quickly, loosely tent with foil.
  10. Rest for 10–15 minutes before slicing. Sprinkle with additional Parmesan and fresh parsley before serving.

Notes

Avoid overmixing to keep the meatloaf tender and juicy.

Ground turkey or lean beef can be substituted with similar cooking time.

Use gluten-free breadcrumbs for a gluten-free version.
