Ingredients

For the Cheesesteak:

1 tablespoon olive oil

1/2 pound ribeye steak, thinly sliced

1/2 onion, thinly sliced

1/2 bell pepper, thinly sliced

2 cloves garlic, minced

Salt and pepper to taste

For the Sandwich:

2 bagels, split and toasted

2 large eggs

2 slices provolone cheese (or American cheese)

2 tablespoons mayonnaise (optional)

Fresh parsley for garnish (optional)


Instructions

  • Prepare the Cheesesteak Filling:
    Heat olive oil in a large skillet over medium-high heat. Add the sliced onion, bell pepper, and garlic, cooking for 3-4 minutes until softened.
    Add the thinly sliced ribeye steak, season with salt and pepper, and cook for 3-4 minutes until the steak is cooked through and slightly caramelized.
    Reduce heat to low, layer the provolone cheese on top of the steak, and cover to melt the cheese.

  • Make the Fried Eggs:
    While the cheesesteak is cooking, heat a small nonstick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up or over-easy works best for this sandwich).

  • Assemble the Sandwich:
    Spread mayonnaise on the toasted bagel halves if desired.
    Layer the cheesesteak mixture on the bottom half of the bagel, then top with the fried egg.
    Garnish with fresh parsley for extra flavor if desired.
    Place the top half of the bagel on the sandwich and serve immediately.

Notes

Feel free to swap the provolone for your favorite cheese like American or cheddar.
