Ingredients
- 1 sprouted grain tortilla (such as Ezekiel)
- ¼ cup Simple Homemade Pizza Sauce
- ¼ cup Epic Tahini Lemon Garlic Sauce
- 1 ½ cups fresh baby spinach
- ¼ cup chopped red onion
- ½ cup chopped sweet bell pepper
- ¼ cup sliced olives (no oil)
- 4 to 5 baked falafel patties
- 2 tbsp fresh chopped parsley
- Crushed red pepper (optional, for heat)
Instructions
1. Preheat the Oven:
- Preheat oven to 450°F (230°C).
2. Prepare the Falafel:
- Make and bake the falafel, then set them aside.
3. Prepare the Sauces:
- Make the pizza sauce and tahini lemon garlic sauce, then set them aside.
4. Assemble the Pizza:
- Place the thawed sprouted grain tortilla on a pizza pan or stone.
- Spread the pizza sauce evenly on the tortilla.
- Layer with spinach, red onion, bell pepper, olives, and crumbled falafel.
5. Add Sauce:
- Drizzle the tahini lemon garlic sauce over the top of the pizza.
6. Bake:
- Bake for 10-12 minutes or until the crust is crispy and golden.
7. Garnish and Serve:
- Remove from the oven, sprinkle with fresh parsley and optional crushed red pepper.
- Slice and enjoy!
