Description

These Veggie Pinwheels are a fresh, healthy, and flavorful appetizer filled with crisp vegetables, creamy feta, and tangy tzatziki sauce. Perfect for any occasion, these pinwheels are quick to prepare and easily customizable.


Ingredients

1/2 cup tzatziki sauce

8 ounces crumbled feta cheese

1 small English cucumber, finely diced

3 Roma tomatoes, seeded and diced

2 yellow or orange mini sweet peppers, seeded and finely diced

1 red onion, sliced

1/2 cup sliced pitted Kalamata olives

4 whole wheat tortillas

1 teaspoon dried oregano


Instructions

  1. Make the feta mixture: Place the tzatziki sauce and feta cheese in a bowl and whisk together until well combined and almost smooth.
  2. Prepare the veggies: Dice the cucumber, tomatoes, sweet peppers, and red onion, and slice the Kalamata olives.
  3. Assemble the pinwheels: Lay one tortilla on a clean cutting board. Spread about 2 spoonfuls of the feta cheese mixture over the tortilla. Top it with the diced veggies and olives.
  4. Roll up the tortilla: Tightly roll up the tortilla in cling film and refrigerate. Repeat with the remaining tortillas and veggie filling.
  5. Slice and serve: Once chilled (at least 1 hour), remove the cling film and slice the rolled tortillas into 1.5-inch rounds. Arrange the pinwheels on a platter.
  6. Garnish and enjoy: Sprinkle the pinwheels with dried oregano for extra flavor and serve.
