Ingredients

Pho Noodles (dried flat rice noodles)

200 grams beef (flank, skirt, or sirloin)

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sugar

1/2 teaspoon ground ginger

1/2 teaspoon chicken bouillon powder or mushroom seasoning

1 tablespoon neutral oil (for frying)

Vegetables: Bok choy, bean sprouts, or your preferred vegetables

Aromatics: Yellow onion, garlic, green onions

1 teaspoon baking soda (for tenderizing beef)

1 tablespoon cornstarch

1 beaten egg


Instructions

  • Prepare the Beef & Sauce:

    • Thinly slice the beef and marinate with soy sauce, oyster sauce, sugar, ginger, and bouillon powder for at least 20 minutes. In a separate bowl, mix the sauce ingredients (soy sauce, oyster sauce, sugar, ginger, bouillon powder) and set aside.

  • Blanch Vegetables & Noodles:

    • Briefly blanch the bulky vegetables (bok choy, bean sprouts) and noodles in hot water before stir-frying to reduce their volume and soften them.

  • Fry the Beef:

    • Shallow fry the marinated beef in oil until browned. Drain on paper towels.

  • Stir-Fry Aromatics:

    • Sauté onions, garlic, and green onions in oil until fragrant and soft.

  • Combine Ingredients:

    • Add the cooked noodles, sauce, fried beef, and blanched vegetables to the pan. Stir-fry everything for a few minutes until well combined and heated through. Serve hot.
