Whole Roasted Cauliflower with Grapes and Feta

Description

A Mediterranean-inspired dish featuring roasted cauliflower, sweet blistered grapes, tangy feta cheese, and fresh herbs, perfect for a healthy and elegant meal.


Ingredients

1 large head of cauliflower

2 tbsp olive oil

1 tsp sea salt

½ tsp black pepper

1 tsp smoked paprika (optional)

1 ½ cups seedless red or black grapes, stems removed

1 tbsp olive oil

½ cup feta cheese, crumbled

2 tbsp fresh parsley, chopped

1 tbsp toasted pine nuts (optional)

Zest of ½ lemon


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Remove the leaves from the cauliflower and trim the stem end so the cauliflower sits flat, but keep the head intact.
  3. Place the cauliflower on the prepared baking sheet. Drizzle with 2 tbsp olive oil and rub to coat evenly. Sprinkle with sea salt, black pepper, and smoked paprika (if using).
  4. Roast the cauliflower for 40 minutes, or until it starts to soften and turn golden.
  5. While the cauliflower is roasting, toss the grapes with 1 tbsp olive oil in a small bowl.
  6. After the cauliflower has roasted for 40 minutes, scatter the grapes around it on the baking sheet. Return to the oven and roast for another 15 minutes, or until the cauliflower is tender and golden, and the grapes are blistered.
  7. Transfer the roasted cauliflower to a serving platter. Arrange the grapes around the cauliflower. Sprinkle with crumbled feta, fresh parsley, pine nuts (if using), and lemon zest.
  8. Serve warm, cutting the cauliflower into wedges at the table.

Notes

For a vegan version, use plant-based feta or omit the cheese entirely.

If you don’t have pine nuts, walnuts or almonds work as great alternatives.

For added sweetness, drizzle honey or balsamic glaze over the finished dish.

Swap parsley with basil or mint for a different herb flavor.
