Description
Tender, juicy chicken breasts marinated in olive oil, lemon juice, garlic, and za’atar, then grilled to perfection for a flavorful Middle Eastern-inspired dish.
Ingredients
4 boneless, skinless chicken breasts
1/4 cup extra virgin olive oil
1/4 cup lemon juice
1/4 cup za’atar
4 cloves garlic, minced
2 teaspoons salt
1 teaspoon black pepper
Instructions
- Place the chicken breasts in a large glass baking dish or resealable plastic bag.
- In a small bowl, whisk together olive oil, lemon juice, za’atar, garlic, salt, and pepper.
- Pour the marinade over the chicken and coat evenly. Refrigerate for at least 30 minutes or up to overnight.
- Preheat the grill to medium-high heat.
- Grill the chicken for 7–8 minutes per side, or until the internal temperature reaches 155°F or higher.
- Remove from the grill and let rest for 5–10 minutes before serving.
Notes
Chicken thighs can be substituted for chicken breasts for extra juiciness.
If a grill is not available, use a grill pan or bake at 400°F for 20–25 minutes.
Add yogurt to the marinade for a creamier texture.
Sprinkle red pepper flakes or cayenne for added spice.
Store leftovers in the fridge for up to 3 days.
Chicken can be frozen raw in the marinade for easy meal prep.
