Ingredients
3 medium zucchini
⅔ cup shredded mozzarella cheese
6 tablespoons Italian sausage, cooked and crumbled
6 tablespoons pizza sauce
⅓ cup mini pepperoni
Instructions
- Preheat oven to 375°F (190°C).
- Wash, dry, and slice each zucchini in half lengthwise to create 6 halves. Scoop out the centers to form wells.
- Spread 1 tablespoon of pizza sauce into each zucchini half.
- Sprinkle 1 tablespoon of cooked Italian sausage into each half.
- Top with mozzarella cheese and finish with mini pepperoni.
- Place zucchini halves in a greased 9×13 casserole dish.
- Bake for 20–25 minutes, until zucchini is tender and cheese is melted and golden.
