Description

Ingredients

1 tablespoon olive oil

1 pound ground turkey

1 small onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust to taste)

1 bag (10 oz) cauliflower rice (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook for 5–7 minutes, breaking it apart until browned and fully cooked.
  3. Stir in diced onion and minced garlic, cooking for 2–3 minutes until softened.
  4. Add cumin, smoked paprika, and red pepper flakes, stirring well and toasting for about 1 minute.
  5. Mix in cauliflower rice and diced tomatoes until evenly combined.
  6. Cook for another 5–7 minutes, stirring occasionally, until cauliflower is tender.
  7. Season with salt and pepper to taste, then remove from heat.
  8. Garnish with fresh cilantro and serve with lime wedges.

Notes

Adjust spice level by reducing or increasing red pepper flakes.

Substitute ground turkey with chicken, beef, tofu, or chickpeas.

Add extra vegetables like bell peppers, zucchini, or spinach for more nutrients.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet or microwave, adding a splash of water if needed.
