These BBQ Chicken and Peach Quesadillas combine smoky barbecue chicken, sweet peaches, fresh cilantro, and melted cheese inside a crispy golden tortilla. The sweet and savory flavors create a quick and satisfying meal perfect for lunch, dinner, or a hearty snack.
Ingredients
1 (10 inch) tortilla
1/4 cup cheddar cheese, shredded
1/4 cup Monterey Jack cheese, shredded
1/4 cup cooked chicken, shredded and mixed with 2 tablespoons BBQ sauce
1 peach, thinly sliced
Cilantro, to taste
Instructions
- Heat a skillet over medium heat.
- Place the tortilla in the skillet and sprinkle half of the cheese over one half of the tortilla.
- Top with the BBQ chicken, peach slices, and cilantro.
- Sprinkle the remaining cheese over the filling.
- Fold the tortilla in half to cover the filling.
- Cook for 2–4 minutes per side until golden brown and the cheese is melted.
- Remove from the skillet, slice into wedges, and serve immediately.
Notes
Try mozzarella, pepper jack, or smoked gouda for different flavor profiles.
Add jalapeños, hot sauce, or spicy BBQ sauce for extra heat.
