Description

This Broccoli Apple Salad is a crisp, colorful side dish featuring fresh broccoli, sweet apples, dried cranberries, and a creamy homemade dressing. It’s quick to prepare and perfect for picnics, potlucks, holidays, or everyday meals.


Ingredients

4 cups fresh broccoli florets (about 2 medium heads), chopped small

2 medium apples (Honeycrisp or Gala), diced

1/2 cup shredded carrots

1/3 cup dried cranberries

1/3 cup sunflower seeds or chopped pecans

1/4 cup red onion, finely diced

1/2 cup shredded cheddar cheese (optional)

1/2 cup plain Greek yogurt, mayonnaise, or half and half

2 tablespoons apple cider vinegar

2 tablespoons honey or maple syrup

1/2 teaspoon Dijon mustard

Pinch of salt

Pinch of black pepper


Instructions

  1. Chop the broccoli into bite-sized florets and dice the apples, leaving the skin on if desired. Toss the apples with a little lemon juice if preventing browning.
  2. In a large bowl, combine the broccoli, apples, shredded carrots, dried cranberries, sunflower seeds, red onion, and shredded cheddar cheese if using.
