Ingredients

4 boneless, skinless chicken breasts

1 cup fresh mozzarella cheese, diced

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

2 tablespoons balsamic glaze

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Toothpicks or kitchen twine


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast without slicing all the way through.
  3. In a bowl, mix mozzarella, cherry tomatoes, basil, balsamic glaze, salt, and pepper.
  4. Stuff each chicken breast with the mixture and secure with toothpicks or twine.
