Ingredients
4 boneless, skinless chicken breasts
1 cup fresh mozzarella cheese, diced
1 cup cherry tomatoes, halved
1/2 cup fresh basil leaves, chopped
2 tablespoons balsamic glaze
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
Toothpicks or kitchen twine
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast without slicing all the way through.
- In a bowl, mix mozzarella, cherry tomatoes, basil, balsamic glaze, salt, and pepper.
- Stuff each chicken breast with the mixture and secure with toothpicks or twine.
- Rub chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Place chicken in a greased baking dish.
- Bake for 30–35 minutes until internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before slicing.
- Serve with additional balsamic glaze if desired.
