Ingredients

3 tablespoons lime juice

1 1/2 tablespoons olive oil

1 chipotle chile in adobo sauce, finely chopped

2 tablespoons chopped fresh cilantro

1 tablespoon honey

Kosher salt, to taste

Fresh ground black pepper, to taste

1 1/2 pounds boneless skinless chicken breasts

2 cups diced mango

1/4 cup diced red onion

1/2 cup diced red bell pepper

2 tablespoons chopped fresh cilantro (for salsa)

2 tablespoons lime juice (for salsa)

1/2 teaspoon chili powder

Kosher salt, to taste (for salsa)

Fresh ground black pepper, to taste (for salsa)


Instructions

  1. In a bowl, whisk together lime juice, olive oil, chopped chipotle chile, cilantro, honey, salt, and pepper to make the marinade.
  2. Place chicken in a resealable bag, pour in the marinade, seal, and massage to coat evenly. Refrigerate for at least 2 hours or overnight.
  3. Preheat grill to 400°F and lightly oil the grates.
  4. Remove chicken from marinade and shake off excess.
  5. Grill chicken for 6–8 minutes per side until the internal temperature reaches 165°F.
  6. Let chicken rest for 5 minutes, then slice.
  7. In a bowl, combine mango, red onion, red bell pepper, cilantro, lime juice, chili powder, salt, and pepper to make the salsa.
  8. Stir well and adjust seasoning to taste.
  9. Serve sliced chicken topped with mango salsa.
