Description

These fresh peach fritters are golden and crisp on the outside with a soft, fluffy interior packed with juicy peach pieces. Finished with either a sugary coating or a sweet powdered sugar glaze, they make a delicious breakfast, dessert, or afternoon treat.


Ingredients

1 cup flour

1 teaspoon salt

1 teaspoon baking powder

2 tablespoons sugar

1/2 teaspoon cinnamon

2 eggs

1/3 cup milk

1 tablespoon melted butter

1 1/4 cups diced peaches

Granulated sugar for coating, optional

Oil for frying

1 cup powdered sugar

Milk, as needed for glaze


Instructions

  1. In a large mixing bowl, whisk together the flour, salt, baking powder, sugar, and cinnamon.
  2. Add the eggs, milk, and melted butter, whisking until a smooth batter forms.
  3. Gently fold in the diced peaches until evenly distributed.
  4. Heat oil in a deep fryer or heavy-bottomed pan to 375°F (190°C).
  5. Carefully drop 1/4 to 1/2 cup portions of batter into the hot oil using a ladle.
  6. Fry for 2 to 3 minutes, turning if needed, until the fritters are puffed and golden brown.
  7. Remove the fritters with tongs or a slotted spoon and drain on paper towels.
  8. For a sugar coating, roll the warm fritters in granulated sugar.
  9. For the glaze, whisk together the powdered sugar and enough milk to create a smooth drizzling consistency.

Nectarines, apricots, pears, or apples can be substituted for peaches.
