Perfect for busy weeknight dinners, family meals, or special occasions, this easy shrimp pasta recipe delivers incredible flavor with simple ingredients.
Ingredients
1 pound uncooked shrimp (31–40 count per pound), thawed and peeled, tails optional
8 ounces uncooked fettuccine pasta
2 tablespoons butter
4 ounces cream cheese, softened and cut into smaller pieces
¾ cup heavy whipping cream
¼ cup chicken broth
2 large garlic cloves, minced
1 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Instructions
- Prepare the Shrimp: If using frozen shrimp, place them in a colander and thaw completely under cool running water. Peel the shrimp if necessary and remove the tails if desired. Pat them dry with paper towels and set aside.
- Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package directions until al dente. Reserve a small amount of pasta cooking water before draining, then set the pasta aside.
- Prepare the Alfredo Sauce: In a large skillet over medium heat, combine the butter, softened cream cheese, heavy whipping cream, chicken broth, and minced garlic. Stir frequently as the butter and cream cheese melt, allowing the ingredients to blend into a smooth, creamy sauce.
- Simmer the Sauce: Allow the Alfredo sauce to gently bubble for approximately 5 minutes, stirring occasionally until it begins to thicken slightly. Avoid boiling vigorously to maintain a smooth consistency.
- Add the Parmesan Cheese: Stir the freshly grated Parmesan cheese into the warm sauce until completely melted and incorporated. Continue cooking for approximately 1 minute, stirring gently to create a rich, velvety texture.
- Cook the Shrimp: Add the prepared raw shrimp directly to the Alfredo sauce. Cook for approximately 5–6 minutes, stirring occasionally, until the shrimp turn pink, opaque, and are cooked through. Avoid overcooking to keep the shrimp tender and juicy.
- Season the Alfredo: Taste the sauce and season with salt and freshly ground black pepper as needed. If the sauce becomes too thick, gradually stir in a small amount of reserved hot pasta water until it reaches the desired consistency.
- Combine the Pasta and Sauce: Add the drained fettuccine to the skillet and gently toss until the pasta is evenly coated with the creamy garlic Parmesan sauce and shrimp.
- Serve Immediately: Divide the Shrimp Alfredo among four serving plates and serve immediately while the pasta is hot and the sauce is creamy. Enjoy with garlic bread, a fresh green salad, or roasted vegetables if desired.
Notes
Use medium shrimp, approximately 31–40 shrimp per pound, for the recommended size and cooking time.
Frozen shrimp work well in this recipe. Thaw completely under cool running water before cooking.
Peel and devein the shrimp if necessary. Removing the tails makes the finished pasta easier to eat.
Use freshly grated Parmesan cheese for the smoothest, creamiest Alfredo sauce.
Avoid pre-shredded Parmesan cheese when possible because added anti-caking ingredients may create a grainy sauce.
Soften the cream cheese and cut it into smaller pieces before cooking to help it melt smoothly.
Use heavy whipping cream for a rich, velvety Alfredo sauce.
Keep the sauce at a gentle simmer rather than a vigorous boil to prevent separation.
Reserve some pasta cooking water before draining the fettuccine. Add small amounts if the Alfredo sauce becomes too thick.
Cook the fettuccine until al dente so it maintains a pleasant texture when tossed with the sauce.
Cook the shrimp just until pink, opaque, and cooked through. Overcooking can make them rubbery.
For Chicken Alfredo, replace the shrimp with cooked chicken and heat it through in the prepared sauce.
For Spicy Shrimp Alfredo, add crushed red pepper flakes or a pinch of cayenne pepper.
For Broccoli Alfredo, add steamed broccoli florets to the sauce before combining with the pasta.
For Spinach Alfredo, stir fresh spinach into the sauce and cook briefly until wilted.
For Lemon Garlic Alfredo, add a little freshly grated lemon zest to brighten the creamy sauce.
Fettuccine is recommended because its wide noodles hold the rich sauce beautifully, but linguine or penne can also be used.
For a variation without cream cheese, use additional heavy cream and Parmesan cheese, keeping in mind that the sauce consistency will be different.
Pre-cooked shrimp can be substituted for raw shrimp. Add them near the end of cooking and heat briefly to avoid overcooking.
Serve Shrimp Alfredo with garlic bread, a fresh green salad, or roasted vegetables for a complete meal.
This dish tastes best immediately after cooking, while the sauce is smooth and creamy.
Store leftover Shrimp Alfredo in an airtight container in the refrigerator for up to 3 days.
Reheat leftovers gently in a skillet over low heat with a splash of cream or milk to loosen the sauce.
Avoid overheating during reheating because the shrimp can become rubbery and the Alfredo sauce may separate.
Freezing is not recommended because cream-based sauces can become grainy or separate after thawing.
For easier meal preparation, thaw and clean the shrimp, mince the garlic, and grate the Parmesan cheese in advance.
This recipe makes approximately 4 servings and is ready in just 30 minutes.
