Description

Hot Honey Pumpkin with Red Onion, Feta & Walnuts is a delicious autumn side dish featuring tender, caramelized roasted pumpkin, sweet red onions, creamy feta cheese, and crunchy walnuts. Drizzled with spicy hot honey, this easy roasted pumpkin recipe delivers the perfect balance of sweet, savory, tangy, and spicy flavors. Ready in just 45 minutes, it is a beautiful and flavorful addition to family dinners, Thanksgiving celebrations, and holiday gatherings.

Ingredients

For the Roasted Pumpkin:

1 medium sugar pie pumpkin (about 2 lbs), seeded and cut into 1-inch wedges

1 large red onion, thinly sliced

2 tablespoons olive oil

½ teaspoon kosher salt

¼ teaspoon black pepper

For the Hot Honey Glaze:

3 tablespoons hot honey (or 3 tablespoons regular honey mixed with ½ teaspoon red pepper flakes)

For the Toppings:

½ cup crumbled feta cheese

½ cup walnut halves, roughly chopped

Fresh thyme leaves (optional)

Pomegranate seeds (optional)

Balsamic glaze, for drizzling (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the Pumpkin and Onion: Wash the pumpkin, remove the seeds, and cut it into approximately 1-inch wedges. Thinly slice the red onion. Arrange the pumpkin wedges and sliced onion on the prepared baking sheet in a single layer.
  3. Season the Vegetables: Drizzle the pumpkin and red onion with olive oil. Sprinkle evenly with kosher salt and black pepper, then gently toss until the vegetables are well coated.
  4. Roast Until Tender: Place the baking sheet in the preheated oven and roast for approximately 25–30 minutes, turning the vegetables halfway through cooking. Continue roasting until the pumpkin becomes fork-tender and develops golden, caramelized edges.
  5. Add the Hot Honey: During the final 5 minutes of roasting, drizzle the hot honey evenly over the pumpkin and red onion. If using homemade hot honey, combine regular honey with red pepper flakes before drizzling. Return the vegetables to the oven to allow the honey to create a lightly caramelized glaze.
  6. Add the Feta and Walnuts: Remove the roasted vegetables from the oven and carefully transfer them to a serving platter. Sprinkle the crumbled feta cheese and roughly chopped walnuts evenly over the warm pumpkin and onions.
  7. Garnish and Serve: Finish with optional fresh thyme leaves, pomegranate seeds, or a drizzle of balsamic glaze. Serve immediately while the pumpkin is warm, the feta is creamy, and the walnuts are crunchy.

Notes

Use a sugar pie pumpkin for its naturally sweet flavor and tender texture when roasted.

Butternut squash can replace pumpkin for a similar sweet and caramelized flavor.

Cut the pumpkin into evenly sized 1-inch wedges to ensure consistent roasting.

Peeling the pumpkin is optional. Leave the skin on if using a variety with tender, edible skin, or remove it for a softer texture.

Arrange the pumpkin and onion in a single layer without overcrowding the baking sheet to encourage caramelization and prevent sogginess.

Roast the vegetables at 425°F (220°C) for approximately 25–30 minutes, turning halfway through for even browning.

Add the hot honey during the final 5 minutes of roasting to create caramelized edges without burning the honey.

To make homemade hot honey, combine 3 tablespoons regular honey with ½ teaspoon red pepper flakes.

For an extra-spicy version, increase the amount of red pepper flakes according to taste.

For a milder version, reduce the chili flakes or use regular honey.

Goat cheese can replace feta for a softer, creamier topping.

For a nut-free variation, substitute toasted pumpkin seeds for the walnuts.

For a festive presentation, add fresh pomegranate seeds for color and a burst of freshness.

Fresh thyme leaves add an aromatic herbal flavor that complements the roasted pumpkin.

A drizzle of balsamic glaze provides extra tanginess and sweetness.

For a vegan variation, use plant-based feta and replace honey with maple syrup mixed with chili flakes.

Prepare the pumpkin wedges and sliced red onion ahead of time and refrigerate until ready to roast.

Add the feta cheese and walnuts just before serving to preserve their creamy and crunchy textures.

Serve alongside roasted chicken, grilled meat, quinoa, or other favorite main dishes.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Reheat the roasted pumpkin and onion in a 350°F (175°C) oven for approximately 10–15 minutes, until warmed through.

For the best texture, add fresh feta and walnuts after reheating rather than heating them with the vegetables.

Roasted pumpkin and onion can be frozen, although freezing and thawing may soften their texture.

This recipe makes approximately 4–6 servings and is perfect for autumn dinners, Thanksgiving, and holiday entertaining.
