Description
A creamy, refreshing homemade ice cream with bright key lime flavor and crushed graham crackers for a classic key lime pie twist. The easy no-cook base makes this frozen dessert simple to prepare.
Ingredients
1 1/2 cups whole milk
1/2 cup key lime juice
Zest of 1 lime
1/2 cup heavy cream
Dash of salt
1 (14-ounce) can sweetened condensed milk
6 graham crackers (1 1/2 cookie sheets), coarsely crushed, divided
Graham cracker pieces, for garnish
Key lime wedges or lime zest, for garnish
Instructions
- Add the whole milk, key lime juice, lime zest, heavy cream, salt, and sweetened condensed milk to a large bowl. Whisk until thoroughly combined.
- Cover the bowl with a lid or plastic wrap and refrigerate for 4 hours or up to overnight if desired. Chilling is optional but helps the mixture churn efficiently.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, about 30 minutes or until thick with a soft-serve consistency.
- Stir 1/3 cup of the crushed graham crackers into the churned ice cream.
- Transfer the ice cream to a freezer-safe container, cover, and freeze for about 1 hour or until firm.
- To serve, sprinkle each portion with about 1 teaspoon of crushed graham crackers and garnish with key lime wedges or fresh lime zest.
Notes
Chilling the ice cream base for 4 hours or overnight before churning is optional but recommended for best results.
For additional graham cracker flavor and texture, layer extra crushed graham crackers into the ice cream as it is transferred to the freezer container.
Extra fresh lime zest can be added as a garnish for a stronger citrus aroma.
Store the ice cream tightly covered in a freezer-safe airtight container, preferably toward the back of the freezer where the temperature is more consistent.
For the best texture and flavor, enjoy within 1 to 2 weeks.
If the ice cream becomes too firm to scoop, leave it at room temperature for 5 to 10 minutes before serving.
