Description

This pumpkin baked oatmeal combines creamy pumpkin puree, rolled oats, warm pumpkin pie spice, and optional chocolate chips for a tender, sliceable breakfast. It is perfect for fall breakfasts, brunch, or make-ahead meal prep.


Ingredients

2 ½ cups rolled oats

½1 tablespoon pumpkin pie spice

½ cup sweetener or sugar

1 teaspoon baking powder

¼ teaspoon salt

15.5 oz pureed pumpkin, not pumpkin pie filling

2 eggs

1 cup milk, any kind

1 teaspoon vanilla

1 cup chocolate chips, optional


Instructions

  1. Preheat the oven to 350°F.
  2. Grease a baking dish or cast iron skillet with oil or butter.
  3. In a bowl, combine the rolled oats, pumpkin pie spice, sweetener or sugar, baking powder, and salt.
  4. In a separate large mixing bowl, combine the pureed pumpkin, eggs, milk, and vanilla until evenly mixed.
  5. Add the dry ingredients to the wet ingredients and stir until well combined.
  6. Fold in the chocolate chips, if using, until evenly distributed.
  7. Pour the oatmeal mixture into the prepared baking dish or skillet and spread it evenly.
  8. Bake for 35-40 minutes, or until the center is firm and set and a toothpick inserted into the center comes out clean.
  9. Allow the baked oatmeal to cool completely before slicing so it can firm up and release cleanly from the pan.

Notes

Use old-fashioned rolled oats for the best balance of tenderness and structure. Steel-cut oats may not soften sufficiently, while quick oats can produce a softer texture.

Adjust the pumpkin pie spice from ½ to 1 tablespoon according to taste.

Use pureed pumpkin rather than pumpkin pie filling, which contains added sugar and spices.

Any dairy or plant-based milk can be used.

Chocolate chips are optional and can be replaced with white chocolate chips or omitted.

For extra texture, add chopped pecans or walnuts. Dried cranberries, raisins, or chopped apples can also be stirred into the batter.

For an optional glaze, combine ½ cup confectioner’s powdered sweetener with 1 ½ tablespoon milk and drizzle over the cooled oatmeal.

Serve with maple syrup, nut butter, yogurt, or an extra splash of milk if desired.

Store cooled leftovers in an airtight container in the refrigerator for 4-5 days.

Individual slices can be frozen in freezer-safe containers or bags for up to 2-3 months. Thaw overnight in the refrigerator before reheating for best results.

Reheat individual portions in the microwave in short intervals, adding a splash of milk if desired, or warm several portions covered in a 350°F oven.
