Description

Quick and flavorful Shrimp Scampi with tender shrimp cooked in a rich garlic butter sauce with broth, fresh lime juice, and parsley. Ready in just 17 minutes, it is an easy seafood dinner for busy evenings.


Ingredients

1 lb large shrimp – peeled and deveined

1 teaspoon salt

1 teaspoon black pepper

4 tablespoons butter – divided

5 garlic cloves – minced

2 tablespoons olive oil

¼ cup broth

½ teaspoon red chili flakes – optional

2 tablespoons lime juice

2 tablespoons chopped parsley


Instructions

  1. Season the shrimp evenly with salt and black pepper.
  2. Melt 2 tablespoons of the butter in a heavy-bottom pan over medium heat. Add the olive oil and minced garlic and sauté for 30 seconds to 1 minute, just until fragrant.
  3. Arrange the shrimp in a single layer and cook for about 2 minutes per side, or until they begin to turn pink.
  4. Pour in the broth and add the red chili flakes, if using. Simmer for 2-3 minutes, until the liquid has reduced by about half and the shrimp are cooked through.
  5. Stir in the remaining 2 tablespoons of butter and the lime juice. Mix until the butter melts into the sauce, then immediately remove the pan from the heat.
  6. Sprinkle with chopped parsley and serve hot with pasta, crusty bread, rice, vegetables, or your preferred side.

Notes

Have all ingredients measured and ready before cooking because the shrimp and sauce come together very quickly.

Avoid overcooking the shrimp, as they can become tough and rubbery.

Chicken or vegetable broth works well; choose a broth that is not excessively salty.

Lemon juice can be substituted for the lime juice in the same amount.

For a creamier sauce, stir in a small splash of heavy cream after the broth has reduced.

Increase the red chili flakes for more heat or omit them for a mild version.

Serve with linguine, spaghetti, angel hair pasta, zucchini noodles, cauliflower rice, steamed vegetables, rice, or crusty bread.

Spinach, asparagus, zucchini, or cherry tomatoes can be added for extra vegetables.

Store leftovers in an airtight container in the refrigerator for up to 3-4 days and reheat gently over low heat to avoid overcooking the shrimp.
