Description

This refreshing shrimp, watermelon, and feta salad combines sweet watermelon, tender shrimp, peppery greens, creamy feta, and fresh mint with a bright lime dressing. It’s a light yet satisfying meal that’s perfect for warm-weather lunches, dinners, or entertaining.


Ingredients

2 tablespoons extra virgin olive oil

3 tablespoons fresh lime juice

1 1/2 teaspoons honey

2 drops hot sauce (optional)

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 pound jumbo shrimp, cooked, peeled, and deveined

1/4 cup red onion, very thinly sliced

1/4 cup fresh mint leaves, finely sliced, divided

4 cups seedless watermelon cubes

4 cups arugula/spinach mix

1/4 cup crumbled feta cheese


Instructions

  1. In a large bowl, whisk together the olive oil, lime juice, honey, hot sauce, salt, and black pepper until well combined.
  2. Add the cooked shrimp, sliced red onion, and half of the mint to the dressing.
  3. Toss until the shrimp and onion are evenly coated.
  4. Add the watermelon cubes and gently toss to combine without breaking the fruit.
  5. Arrange the arugula and spinach mix on a large serving platter or individual plates.
  6. Spoon the shrimp and watermelon mixture over the greens.
  7. Sprinkle the crumbled feta cheese over the top.
  8. Garnish with the remaining mint and serve immediately.

Notes

Substitute goat cheese, queso fresco, or fresh mozzarella for feta if desired.

Add sliced cucumber for extra crunch and freshness.

Use basil instead of mint for a different herbal flavor.

Add avocado for a richer texture.

Top with toasted almonds or pistachios for added crunch.

Store greens separately from the shrimp and watermelon mixture if preparing ahead.

Serve immediately after assembling to prevent excess moisture from the watermelon.
