Description

These Spicy Seaweed Tofu Rolls feature crispy baked tofu wrapped in nori and coated in a bold lemongrass, garlic, and chili glaze. Served with rice and fresh vegetables, they make a flavorful, satisfying plant-based meal.


Ingredients

1 block firm tofu

2 to 3 nori sheets

2 tbsp cornstarch, plus 1 tsp for slurry

2 tbsp water, divided

1 stalk lemongrass, finely minced

2 tbsp soy sauce

3 tbsp sweet chili sauce

1 tsp sugar

2 cloves garlic, minced

2 tbsp olive oil or neutral cooking oil

Chopped green onions, for garnish

Toasted sesame seeds, for garnish


Instructions

  1. Slice the firm tofu into bite-sized rectangles and pat each piece dry.
  2. Coat the tofu evenly with cornstarch, shaking off any excess.
  3. Arrange the tofu on a parchment-lined baking sheet and bake at 350°F (175°C) for about 25 minutes, flipping halfway through, until golden.
  4. Allow the tofu to cool until easy to handle.
  5. Cut the nori sheets into strips large enough to wrap around each tofu piece.
  6. Mix 1 teaspoon cornstarch with 1 tablespoon water to make a slurry, then use it to seal each nori strip around the tofu.
  7. Heat the oil in a large skillet over medium heat and sauté the garlic and lemongrass for 2 to 3 minutes.
  8. Stir in the soy sauce, sweet chili sauce, sugar, and remaining water to create the glaze.
  9. Add the wrapped tofu rolls and simmer for 2 to 3 minutes until the sauce thickens and coats the rolls.
  10. Garnish with chopped green onions and toasted sesame seeds before serving with steamed rice or vegetables.

Notes

Air-fry the tofu at 350°F (175°C) for about 20 minutes for an extra crispy texture.

Add bird’s eye chili or red pepper flakes for more heat.

Finish with a drizzle of toasted sesame oil for added richness.

Substitute tempeh for tofu if desired.

Serve with rice, noodles, or sautéed greens for a complete meal.

Store leftovers in the refrigerator for up to 2 days and reheat gently in a skillet.
