Ingredients
4 boneless, skinless chicken breasts
2 cups fresh strawberries, hulled and sliced
1/4 cup fresh basil, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 tablespoons honey
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together the olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper.
- Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them, ensuring they are evenly coated. Marinate for at least 15 minutes.
- Lightly grease a baking dish with olive oil or cooking spray.
- Remove the chicken from the marinade and place it in the baking dish, reserving the extra marinade.
- Bake the chicken for 20 minutes.
- Remove the dish from the oven, scatter the sliced strawberries over the chicken, and drizzle the reserved marinade on top.
- Return the dish to the oven and bake for another 10–15 minutes, or until the chicken reaches an internal temperature of 165°F.
- Sprinkle the fresh basil over the top after baking.
- Let the chicken rest for 5 minutes before serving.

Chicken thighs can be used instead of chicken breasts for a richer flavor.
