Description

This strawberry basil chicken combines juicy baked chicken with sweet strawberries, fresh basil, and a tangy balsamic glaze for a fresh and elegant dinner. It is a colorful and flavorful dish that works perfectly for both busy weeknights and special occasions.


Ingredients

4 boneless, skinless chicken breasts

2 cups fresh strawberries, hulled and sliced

1/4 cup fresh basil, chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 tablespoons honey

1 teaspoon garlic powder

Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together the olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper.
  3. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them, ensuring they are evenly coated. Marinate for at least 15 minutes.
  4. Lightly grease a baking dish with olive oil or cooking spray.
  5. Remove the chicken from the marinade and place it in the baking dish, reserving the extra marinade.
  6. Bake the chicken for 20 minutes.
  7. Remove the dish from the oven, scatter the sliced strawberries over the chicken, and drizzle the reserved marinade on top.
  8. Return the dish to the oven and bake for another 10–15 minutes, or until the chicken reaches an internal temperature of 165°F.
  9. Sprinkle the fresh basil over the top after baking.
  10. Let the chicken rest for 5 minutes before serving.

Notes

Chicken thighs can be used instead of chicken breasts for a richer flavor.

Add extra balsamic vinegar before serving for a stronger tangy taste.

Top with mozzarella cheese during the last few minutes of baking for a creamy variation.

Fresh thyme or parsley pairs well with the basil.

Swap strawberries with raspberries or blackberries for a different fruity twist.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a 350°F oven for about 10 minutes or microwave individual portions until heated through.
