1/4 cup fresh mint leaves, finely chopped
1/4 cup lime juice (freshly squeezed)
2 tablespoons honey
1 tablespoon olive oil
Salt and pepper to taste
Instructions
- Hull and slice the strawberries and cut the watermelon into bite-sized cubes.
- Finely chop the fresh mint leaves and set aside.
- In a small bowl, whisk together lime juice, honey, and olive oil until smooth. Season with salt and pepper.
- In a large bowl, gently combine strawberries and watermelon.
- Fold in the chopped mint leaves without crushing the fruit.
- Drizzle the honey lime vinaigrette over the salad and toss gently to coat.
- Optional: Chill in the refrigerator for 15 minutes before serving for extra freshness.
- Serve immediately and enjoy.
Notes
Add crumbled feta cheese for a salty contrast.
Sprinkle toasted almonds or pistachios for added crunch.
Mix in diced pineapple for a tropical twist.
Swap mint for fresh basil for a different flavor profile.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Do not freeze as the fruit texture will degrade.
Serve shortly after mixing to prevent excess liquid buildup.
