Description

Sweet Corn Salad with Peaches is a fresh and colorful summer salad featuring sweet corn, juicy peaches, creamy avocado, red onion, cilantro, and a bright lime-honey vinaigrette. The balance of sweet, tangy, and slightly spicy flavors makes this refreshing dish perfect for BBQs, potlucks, and warm-weather meals.


Ingredients

4 ears fresh corn, cooked and cooled

2 ripe but slightly firm peaches, sliced or diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

12 avocados, diced

1 jalapeño, thinly sliced or finely diced

Salt, to taste

34 tablespoons fresh lime juice

12 tablespoons honey

Fresh cracked black pepper, to taste


Instructions

  1. Boil or grill the corn until tender, then allow it to cool completely. Cut the kernels off the cob and place them in a large bowl.
  2. Add the peaches, red onion, cilantro, and jalapeño to the bowl with the corn.
  3. In a small bowl, whisk together the lime juice, honey, and black pepper until smooth.
  4. Pour the vinaigrette over the salad and gently toss until evenly coated. Season with salt to taste.
  5. Cover and refrigerate the salad for 10–20 minutes to allow the flavors to blend.
  6. Right before serving, gently fold in the diced avocado or place it on top of each serving.

Notes

Add the avocado just before serving to keep it fresh and prevent browning.

Grilled corn and peaches add a delicious smoky flavor to the salad.

Crumbled feta or cotija cheese makes a flavorful addition.

Black beans, grilled chicken, or shrimp can turn this salad into a heartier meal.

Store leftovers in an airtight container in the refrigerator for up to 1 day.
