Description

These watermelon brie bites are a refreshing and elegant appetizer featuring juicy watermelon, creamy brie, peppery arugula, and a sweet homemade balsamic glaze. They are simple to assemble and perfect for parties, holidays, or summer gatherings.


Ingredients

1/2 small watermelon, cut into small slices

1/2 cup arugula leaves

1/2 brie wheel, rind removed and sliced

1/2 cup balsamic vinegar

3 tablespoons sugar


Instructions

  1. In a small saucepan, combine the balsamic vinegar and sugar.
  2. Bring the mixture to a boil, then reduce the heat and simmer until reduced to a syrup-like consistency, about 15 minutes.
  3. Remove the glaze from the heat and allow it to cool completely.
  4. Arrange the watermelon slices in an even layer on a serving platter.
  5. Top each watermelon slice with a few arugula leaves.
  6. Add a slice of brie on top of the arugula.
  7. Just before serving, drizzle the cooled balsamic glaze over the bites.
  8. Serve chilled or at room temperature.

Notes

Add fresh basil or mint leaves for extra freshness.

Sprinkle chopped pistachios, walnuts, or pecans on top for added crunch.

Drizzle with honey for a sweeter variation.

Baby spinach can be used instead of arugula for a milder flavor.

The balsamic glaze can be made up to 1 week in advance and refrigerated.

Serve immediately after assembly for the best texture.

Store leftovers in the refrigerator for up to 1 day.
